When I worked full-time as an event planner for a law firm, the building had a full-service cafe and caterer and the food was delicious! Therefore, I dedicate this post to my friends at Flik.
While working there (and as I became progressively pregnant), my favorite afternoon pick-me-up was Flik’s Strawberry Agua Fresca. It was refreshing and had the perfect hint of sweetness and strawberry-ness (my favorite fruit…after Philippine mangoes). I decided to make something similar because I missed it so much and it perfectly matched the color scheme of the ombré party. To my surprise, this recipe was even more of a hit at the party than the Champagne Sunrise cocktails!
(4) cups of strawberries, sliced
(2) cups simple syrup (2 cups water + 2 cups white sugar)
(12 )cups cold water
fresh mint leaves (optional)
How to Make Simple Syrup
Bring 2 cups water and 2 cups white sugar to a boil. Stir and let it cool. The sugar will dissolve into the water.
How to Strawberry Agua Fresca
Blend strawberries on high until smooth. Pour the blended berry mixture through wire mesh strainer set over a large mixing bowl. Use a spatula to press mixture through strainer; discard the pulp and seeds. I “swirled” the spatula inside the strainer to help press the pulp through the holes.
Mix the pureed berry mixture with simple syrup and 12 cups cold water. Place the agua fresca in the refrigerator to chill for several hours or pour over ice and serve immediately. Garnish with floating lime slices or mint leaves and enjoy!
